Preheat oven to 350°F (180°C). Using electric mixer, beat together butter, granulated and brown sugar until fluffy; beat in eggs, one at a time. Beat in vanilla. Stir together flour, oats, coconut, baking powder, baking soda, salt and cinnamon; stir into butter mixture until smooth.
Stir in chocolate, pretzels, peanuts and butterscotch chips. Drop 2 tablespoonfuls of batter per cookie onto parchment paper–lined baking sheets, about 2 inches (5 cm) apart. Bake on top and bottom racks, rotating and switching pans halfway through, for 14 to 16 minutes or until golden. Let cool on rack.
Replace peanuts with raisins, dried cranberries or sour cherries for a nut-free cookie.
