Aero Dark Chocolate Cheesecake Brownies

What you need

Brownie Layer

1/2 cup (125 ml) butter
1 cup (250 ml) granulated sugar
1 tsp (5 ml) vanilla extract
2 eggs
1/2 cup (125 ml) all-purpose flour
1/4 cup (60 ml) cocoa powder
1/4 tsp (1 ml) salt

Cheesecake Layer

2 pkg (250 g each) light brick-style cream cheese
1/2 cup (125 ml) granulated sugar
2 eggs
1 tsp (5 ml) vanilla extract

How to prepare

Instructions

Preheat oven to 350°F (180°C). Line 9-inch (2.5 L) baking pan with parchment paper.

Brownie Layer: Chop chocolate; reserve one-quarter and set aside for garnish. In heatproof bowl set over saucepan of hot, not boiling water, melt butter and remaining chocolate. Remove from heat.

Stir in sugar and vanilla; let cool slightly. Whisk in eggs, one at a time, until smooth. Stir in flour, cocoa and salt. Scrape into prepared pan, smoothing with back of spoon.

Cheesecake Layer: In separate bowl, using electric mixer, beat cream cheese with sugar until light. Beat in eggs, one at a time, until smooth; beat in vanilla. Pour over brownie layer. Using butter knife, swirl together. Bake for about 35 minutes or until just set.

Remove from oven. Let cool slightly in pan on rack. While still warm, sprinkle with reserved chocolate. Refrigerate for at least 4 hours before serving. Transfer from pan to cutting board; trim edges and cut into squares.
