Preheat oven to 325°F (160°C). Line 9- x 5-inch (1.5 L) loaf pan with enough parchment paper to overhang sides.
Whisk together whole wheat flour, all-purpose flour, protein powder, baking powder, baking soda and salt. Whisk together eggs, coconut sugar, yogurt, canola oil, brown sugar and vanilla; add mashed bananas. Stir into flour mixture just until combined. Stir in 3/4 cup (175 mL) walnuts.
Scrape into prepared pan; sprinkle with remaining walnuts. Bake for 55 to 65 minutes or until tester inserted in centre comes out clean. Let cool in pan on rack for 10 minutes. Remove from pan; let cool completely.
Store in airtight container for up to one week or freeze for up to one month.
