BOOST Just Protein Mocha Brownies

What you need

1 can (19 oz/540 ml) black beans, drained and rinsed
1/2 cup (125 ml) dates, pitted
1/2 cup (125 ml) cocoa powder
1 tsp (5 ml) baking powder
1 tsp (5 ml) instant espresso powder
1/2 tsp (2 ml) salt
1/2 cup (125 ml) coconut sugar
3 eggs
1 tsp (5 ml) vanilla extract
4 oz (125 g) chopped dark chocolate
1/2 cup (125 ml) coconut oil
1 cup (250 ml) semi-sweet chocolate chips

How to prepare


Preheat oven to 350°F (180°C). Line or grease 8-inch (2 L) square baking dish. 

In food processor, combine black beans and dates; process until smooth. Whisk together cocoa powder, protein powder, baking powder, espresso powder and salt; add to food processor and pulse until combined. Add sugar, eggs and vanilla; process until combined.

In heatproof bowl set over saucepan of hot, not boiling water, melt chocolate with coconut oil; remove from heat. Fold into bean mixture until combined. Stir in chocolate chips. 

Scrape batter into prepared pan. Bake for 20 to 25 minutes or until tester in centre comes out clean.

Refrigerate for about 1 hour or until set. Cut into 16 squares. 



For a pretty presentation, dust brownies with icing sugar before serving.
