BOOST Just Protein No-Bake Power Bars

These easy-to-make energy bars are great to have on hand for snacks on the go. Protein powder gives them a nut-free BOOST.

What you need

Ingredients

2 cups (500 ml) quick-cooking oats
1 cup (250 ml) pitted dates
1/2 cup (125 ml) shredded coconut
1/2 cup (125 ml) cocoa powder
1/4 cup (60 ml) maple syrup
1/4 cup (60 ml) melted coconut oil
1/4 cup (60 ml) chia seeds

How to prepare

Instructions

1. Line 8-inch (2 L) square baking pan with plastic wrap or foil. 

2. In food processor, pulse together oats and dates until chopped. Add coconut, cocoa powder and BOOST Just Protein powder; pulse for about 30 seconds or until in fine crumbs, scraping down sides of bowl as needed. 

3. Add maple syrup, coconut oil and chia seeds; process until smooth. Press mixture into prepared pan; refrigerate for 2 to 3 hours or until firm. Remove from pan and cut into 12 bars. 

4. Refrigerate bars between pieces of waxed paper in airtight container for up to 3 days.

Tips

Chocolate

For extra chocolate flavour, add some chopped dark chocolate to the mixture before pressing into pan.
