BOOST Just Protein Tropical Coconut Cups

How to prepare
Preheat oven to 350°F (180°C). Line 12 muffin cups with paper liners. Whisk together oats, protein powder, sugar, whole wheat flour, baking powder and salt. In separate bowl, whisk together coconut milk, egg, honey and coconut oil; stir into flour mixture just until blended. Fold in apricots, pineapple, mango and half of the coconut. Divide evenly among muffin cups; top with remaining coconut. Bake for 18 to 20 minutes or until tester inserted in centre comes out clean.
Change it up
Substitute maple syrup for honey if desired.
