BOOST Strawberry Flavour Panna Cotta

What you need

Ingredients

2 tsp (10 mL) unflavoured gelatin powder
1 cup (250 mL) oat milk, divided
1 tbsp (15 mL) granular stevia or other non-nutritive sweetener
1 strip lemon peel (2-inch/5 cm long strip)
1 tsp (5 mL) vanilla extract
1/2 cup (125 mL) 1% plain yogurt
2 cups (500 mL) sliced fresh strawberries

In small bowl, sprinkle gelatin over 1/4 cup (60 mL) oat milk; let stand for 5 minutes or until gelatin is softened.

Meanwhile, in saucepan set over medium heat, cook BOOST Diabetic Strawberry, remaining milk, stevia, lemon peel and vanilla until starting to simmer and small bubbles appear around edge of pan. Reduce heat to low. Stir in gelatin mixture; whisk for 1 to 2 minutes or until gelatin is dissolved. Remove lemon peel. Whisk in yogurt until blended.

Divide mixture among 4 (1/2 cup/125 mL) dessert cups. Cover with plastic wrap and refrigerate for 4 to 6 hours or until set. Top each serving with strawberries.

Unmoulding

Panna cotta can be served in dessert cups or, if desired, unmould by inverting onto dessert plate before serving. If unmoulding, coat dessert cups with a little cooking spray before filling.
