BOOST Tex-Mex Meatless Breakfast Sliders

What you need


1/4 cup (60 mL) BOOST Complete+ Probiotic Chocolate Powder
2 tbsp (30 mL) walnuts
1 clove garlic, minced
1/2 cup (125 mL) no-salt-added canned or cooked black beans, drained and rinsed, divided
1/4 cup (60 mL) mashed sweet potato
1/2 tsp (2 mL) chili powder
1/2 tsp (2 mL) cumin
1/4 tsp (1 mL) dried oregano
1/4 tsp (1 mL) pepper
Pinch salt
3 tbsp (45 mL) bread crumbs
1 tsp (5 mL) canola oil
2 whole grain slider buns or rolls, split and toasted
2 small lettuce leaves
2 eggs, scrambled
1 small tomato or cocktail tomato, sliced

How to prepare



In small food processor or blender, mix together walnuts and garlic until coarsely ground. Add BOOST Complete+ Probiotic Chocolate Powder, half of the beans, sweet potato, chili powder, cumin, oregano, pepper and salt; pulse until mashed. Stir in remaining black beans and bread crumbs until combined.


Divide mixture into 2 portions. Shape each portion into 1-inch (2.5 cm) thick patties. Heat oil in nonstick skillet set over medium heat; cook burgers for 3 to 5 minutes per side or until golden brown and heated through.


Assemble burgers in buns with lettuce, scrambled eggs and tomato.
