Quinoa Oatmeal Berry Parfait

How to prepare
Rinse quinoa thoroughly. Drain any excess water and combine in a medium saucepan with oats and boiling water. Cover and let sit overnight.
Add almond milk and cinnamon to quinoa oatmeal mix. Bring to a boil and reduce the heat to low. Stir occasionally until quinoa is tender, 10 to 12 minutes. Add vanilla and let cool completely.
In a medium bowl, combine yogurt, Vanilla Instant Breakfast Drink Powder and nutmeg.
Place 1/4 of the quinoa oatmeal mix in the bottom of each of two glasses. Spoon 1/4 of yogurt mixture on top of quinoa mixture, then top with 1/4 of raspberries. Repeat this process with remaining ingredients.
Garnish with chopped pecans.
Substitute raspberries with your favorite berry.
