Quinoa Oatmeal Berry Parfait

What you need

¼ cup (60 ml) Red quinoa
¼ cup (60 ml) Steel cut oats
1 cup (250 ml) Boiled water
½ cup (125 ml) Almond milk, unsweetened
½ teaspoon (2.5 ml) Vanilla extract
¼ teaspoon (1 ml) Ground cinnamon
1 cup (250 ml) Low-fat plain Greek yogurt
¼ teaspoon (1 ml) Ground nutmeg
2 cups (500 ml) Fresh mixed berries (strawberries, blueberries, raspberries, blackberries)
1 teaspoon (5 ml) Pecans, chopped

How to prepare


Prep Night Before:

Rinse quinoa thoroughly. Strain any excess water and combine in a medium saucepan with oats and 1 cup boiling water. Cover with lid or plastic wrap and leave overnight.

Morning of:

Combine almond milk, salt and nutmeg with quinoa oatmeal mix (red quinoa, steel cut oats, boiled water, almond milk, vanilla extract, ground cinnamon). Bring to a boil and reduce the heat to low. Stir occasionally until quinoa is tender (10-12 minutes). Add the vanilla and let cool completely.

Combine all yogurt mix ingredients (low-fat plain Greek yogurt, CARNATION BREAKFAST ESSENTIALS Powder Drink Mix, ground nutmeg) in a medium bowl. Place ¼ of the quinoa oatmeal mix in the bottom of each glass. Spoon ¼ of the yogurt mix on top of the quinoa mix, then top with ¼ of the mixed berries. Repeat this process with remaining ingredients.

Garnish with chopped pecans.
