Prep Night Before:
Rinse quinoa thoroughly. Strain any excess water and combine in a medium saucepan with oats and 1 cup boiling water. Cover with lid or plastic wrap and leave overnight.
Combine almond milk, salt and nutmeg with quinoa oatmeal mix (red quinoa, steel cut oats, boiled water, almond milk, vanilla extract, ground cinnamon). Bring to a boil and reduce the heat to low. Stir occasionally until quinoa is tender (10-12 minutes). Add the vanilla and let cool completely.
Combine all yogurt mix ingredients (low-fat plain Greek yogurt, CARNATION BREAKFAST ESSENTIALS Powder Drink Mix, ground nutmeg) in a medium bowl. Place ¼ of the quinoa oatmeal mix in the bottom of each glass. Spoon ¼ of the yogurt mix on top of the quinoa mix, then top with ¼ of the mixed berries. Repeat this process with remaining ingredients.
Garnish with chopped pecans.
