TURTLES Toasted Coconut Snowballs

What happens when Toasted Coconut TURTLES go dashing through the snow? TURTLES Snowballs, of course.

What you need

Ingredients

24 Toasted Coconut TURTLES, cut in half (See TURTLES products)
1 1/2 cup sweetened flaked coconut
1 cup all-purpose flour
1 1/4 cup icing sugar
a pinch salt
6 tbsp butter, softened
1 tsp vanilla extract
4 tsp milk

How to prepare

Instructions

Preheat oven to 350oF.

Set aside 1 cup of coconut and 1 cup of icing sugar.

 

Grind remaining ½ cup of coconut in a food processor.

 

Add flour, ¼ cup icing sugar and salt. Pulse to blend. Add butter and vanilla and continue to pulse until a dough is formed.

 

Scoop 1 tbsp. balls of dough and flatten with your hands. Place half a Toasted Coconut TURTLE on the dough and top with another tbsp. of dough. Roll to form a ball.

 

Place snowballs 1 inch apart on an ungreased cookie sheet and bake until firm, but tender (about 15 minutes). Move to cooling racks and cool completely.

 

Pour remaining cup of icing sugar into a small bowl. Stir in enough milk to form a smooth but thick glaze. Dip cookies in glaze, and dip in chopped coconut. Move completed snowballs to plate and let dry completely.
