Baked Almond Oatmeal Cups

1/2 cup COFFEE-MATE Bliss Almond Vanilla
1/2 cup unsweetened almond milk
1/2 cup unsweetened apple sauce
2 large eggs
2 tbsp unsalted butter, melted
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
2 1/2 cup sold-fashioned oats
1/4 cup raisins
1/4 cup toasted sliced almonds

Instructions

Preheat oven to 350° F. Line 12 muffin cups with paper or foil cupcake liners.

Place COFFEE-MATE Bliss Almond Vanilla, almond milk, apple sauce, eggs, butter, baking powder, cinnamon, nutmeg and salt in a large bowl. Whisk until fully combined. Add oats, raisins and almonds; stir to mix. Fill each liner with ¼ cup oat mixture.

Bake for 25 minutes or until wooden pick inserted in cup comes out clean. Allow to cool for 10 minutes. Dust with powdered sugar before serving, if desired.
