BOOST Just Protein Banana Crunch Loaf

Banana bread is studded with chunks of walnuts and BOOSTed with protein powder for a great post-workout or midday snack or dessert.

What you need


3/4 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon Salt
2 Eggs
3/4 cup coconut sugar
1/2 cup Plain Greek yogurt
1/2 cup canola oil
1/4 cup brown sugar
1 teaspoon Vanilla extract
3 ripe bananas, mashed
1 cup chopped walnuts, divided

How to prepare



Preheat oven to 325°F (160°C). Line 9- x 5-inch (1.5 L) loaf pan with enough parchment paper to overhang sides.


Whisk together whole wheat flour, all-purpose flour, ]BOOST Just Protein Powder, baking powder, baking soda and salt. Whisk together eggs, coconut sugar, yogurt, canola oil, brown sugar and vanilla; add mashed bananas. Stir into flour mixture just until combined. Stir in 3/4 cup (175 mL) walnuts.


Scrape into prepared pan; sprinkle with remaining walnuts. Bake for 55 to 65 minutes or until tester inserted in centre comes out clean.


Let cool in pan on rack for 10 minutes. Remove from pan; let cool completely.



Store in airtight container for up to one week or freeze for up to one month.
