BOOST Just Protein Coconut Energy Bites

Coconut, apricots and oats are combined to form satisfying bite-size clusters that will give you a BOOST any time of the day.

    Ingredients

    1/2 cup (125 ml) BOOST Just Protein
    1 cup (250 ml) dried apricots
    2 cups (500 ml) quick-cooking oats
    2/3 cup (150 ml) shredded coconut
    1/4 cup (60 ml) hemp seeds
    1/4 cup (60 ml) Coconut oil, melted
    2 tablespoons (30 ml) Maple Syrup
    1 cup (250 ml) toasted shredded or desiccated unsweetened coconut

    Instructions

    Line 8-inch (2 L) square baking pan with plastic wrap or foil.

    Place apricots in small bowl. Add enough lukewarm water to cover; let stand for about 15 minutes or until softened. Drain.

    In food processor, pulse together oats and apricots until chopped. Add coconut, BOOST Just Protein Powder and hemp seeds; pulse for about 30 seconds or until mixture resembles fine crumbs, scraping down sides of bowl as needed.

    Add coconut oil and maple syrup; process until smooth. Let stand for 15 minutes.

    Roll tablespoonfuls into 36 clusters; roll in toasted coconut. Refrigerate on tray for 2 to 3 hours or until firm. (Can be refrigerated between pieces of waxed paper in airtight container for up to 3 days).

    Roll clusters in cocoa powder or finely chopped almonds instead of toasted coconut if desired.
