BOOST Just Protein Peanut Butter Cookies

    Ingredients

    2/3 cup (150 ml)butter, at room temperature
    1/2 cup (125 ml) natural peanut butter
    1 1/4 cups (300 ml) coconut sugar
    2 eggs
    1 tsp (5 ml) vanilla extract
    1 1/2 cups (375 ml) all-purpose flour
    1 tsp (5 ml) baking soda
    1/4 tsp (1 ml) salt
    3/4 cup (175 ml) chopped roasted peanuts

    Preheat oven to 350°F (180°C). Beat together butter and peanut butter until fluffy. Beat in coconut sugar, scraping down sides as needed. Beat in eggs, one at a time, until smooth. Beat in vanilla.

    Whisk together flour, protein powder, baking soda and salt; stir into butter mixture, scraping down sides as needed. Stir in peanuts. Refrigerate dough for 30 minutes.

    Drop heaping tablespoonfuls onto parchment paper–lined baking sheets; press cookies down gently with spatula or fork. Bake for 8 to 10 minutes or until golden.

    Let cool on baking sheets for 5 minutes. Transfer to rack; let cool completely.
