BOOST Just Protein Tropical Coconut Cups

Preheat oven to 350°F (180°C). Line 12 muffin cups with paper liners.
In a large bowl, whisk BOOST Just Protein powder, oats, sugar, flour, baking powder and salt. In medium bowl, whisk coconut milk, honey, egg and coconut oil; stir into flour mixture just until blended. Fold in apricots, pineapple, mango and half of coconut. Divide evenly among muffin cups; top with remaining coconut.
Bake for 18 to 20 minutes or until tester inserted in centre comes out clean.
