BOOST Just Protein Tropical Coconut Cups

What you need


1 1/2 cups (375 ml) large flake oats
2 tbsp. (30 ml) whole wheat flour
1/3 cup (75 ml) packed brown sugar
1 tsp (5 ml) baking powder
1/4 tsp (1 ml) salt
1 cup (250 ml) coconut milk
1 egg
1 cup (250 ml) honey
1/4 cup (60 ml) coconut oil, melted
1/4 cup of each (60 ml) chopped dried apricots, dried pineapple and dried mango
1/2 cup (125 ml) toasted shredded coconut, divided

How to prepare



Preheat oven to 350°F (180°C). Line 12 muffin cups with paper liners. Whisk together oats, BOOST Just Protein powder, sugar, whole wheat flour, baking powder and salt. In separate bowl, whisk together coconut milk, egg, honey and coconut oil; stir into flour mixture just until blended. Fold in apricots, pineapple, mango and half of the coconut. Divide evenly among muffin cups; top with remaining coconut.


Bake for 18 to 20 minutes or until tester inserted in centre comes out clean.
