Crispy Strawberry Coconut Rice Balls

    Ingredients

    6 tbsp unsalted butter
    9 cups mini marshmallows
    1 tsp vanilla extract
    3 tbsp Nesquik Strawberry Syrup
    ½ cup dried strawberries, chopped
    ½ cup shredded coconut
    6 cups puffed rice cereal

    Line a 9x13 inch baking dish with parchment paper, set aside.

    In a large pot, melt butter over medium heat then add marshmallows. Melt marshmallows, stirring constantly, until smooth. Turn the heat to low and stir in vanilla and Nesquik syrup. Add remaining ingredients and combine well.

    Using a ¼ cup ice cream scoop and scoop the mixture on a baking sheet lined with parchment paper. Let cool down for 4-5 minutes. With wet hands form the scoops into balls.

    Let cool for 1 hour and enjoy!

    Tip

    if you prefer bars, instead of using a scoop, wet your hands and gently press mixture into a rectangular baking dish until it is evenly spread. Let cool for 1 hour and enjoy.
