Flavour-packed Chocolate Banana Protein Cookies
What you need
Ingredients
1 pouch (40 g) Carnation Breakfast Essentials Powder Drink Mix – Chocolate
1 large banana
1 egg
1/3 cup (75 mL) plain low-fat yogurt
1 1/2 tbsp (25 mL) coconut oil, melted
1 cup (250 mL) rolled oats
1/2 cup (125 mL) walnuts, chopped
2 tbsp (30 mL) wheat bran
1 tbsp (15 mL) brown sugar
1 tbsp (15 mL) dry roasted unsalted sunflower seeds
1 tbsp (15 mL) flax seeds
1/4 cup (60 mL) mini dark chocolate chips
1/2 tsp (2 mL) ground cinnamon
How to prepare

Preheat oven to 350°F. Line a large baking sheet with parchment paper.

In a medium bowl, mash banana until smooth.

Add egg, yogurt and coconut oil; stir until smooth.

Add all remaining ingredients and stir until well combined.

Scoop tablespoons of batter onto prepared baking sheet, 1-inch apart.

Bake for 10 to 14 minutes, until set. Let cool on baking sheet for 10 minutes before transferring to a cooling rack to cool completely.
