Quality Street Khajoor Cake

Perfect for Iftar, this cake is rich with dates that restore energy after a day of fasting. The chocolates add a wonderful depth and flavour to this cake!

    Ingredients

    300g Pitted dates, chopped
    1 cup (250 ml) Boiling water
    1 cup All-purpose flour
    ¾ cup Loosely packed dark brown sugar
    1 teaspoonBaking powder
    1 teaspoon dried ground ginger
    ½ teaspoon Baking soda
    ½ teaspoon ground cardamom (Elaichi)
    Pinch of salt
    ¼ cup Butter, melted
    2 Eggs
    1 teaspoon Vanilla essence
    12 Quality Street Crème candies

    Instructions

    Combine dates and boiling water in small bowl. Allow to soften for 15 min. Drain dates, reserving 1/2 cup of the soaking water.

    Meanwhile, preheat oven to 350F. Grease an 8-inch square baking pan.

    Combine flour, sugar, baking powder, baking soda, ground ginger, ground cardamom and salt in large mixing bowl.

    Combine soaked dates, 1/2 cup soaking water, butter, eggs, and vanilla in the jar of a blender. Blend till almost smooth.

    Combine date mixture with flour mixture, folding it in gently until just combined. Do not over mix.

    Transfer to prepared baking pan and top evenly with the Quality Street Crème candies.
    (Candies will sink into cake)

    Bake for about 30 min or until cake tester inserted into cake comes out clean.

    Cool 15 min, then slice and serve.
