Whip the heavy cream to stiff peaks using electric beaters or a stand mixer and set aside. In another bowl, beat the cream cheese until fluffy. Add the whipped cream to the cream cheese in stages so the mixture remains light and airy without any lumps of cream cheese. Add ½ cup of caramel sauce and refrigerate for a couple of hours to set. Layer the mousse into parfait glasses with the TURTLES, cookies (broken into large pieces), and remaining caramel sauce before serving.
Reduce the fat
Replace heavy cream with light whipped cream, and choose a reduced fat cream cheese!
Add fresh fruit!
Delicious when garnished with fresh fruit.
